I am constantly on the lookout for healthy and delicious foods that my family of four will enjoy. I was pleasantly surprised with this bean salad recipe we discovered on a recent shopping trip to Trader Joe’s.
If there is one thing I love about shopping at Trader Joe’s, it’s that they share some great recipes at their demo station, plus they always have coffee!
I love cooking, but it’s nice when I can easily whip something up that we can snack on for a few days! Lisa’s Bean Salad is one of those types of dishes I can count on for that. I love it because it’s simple, it’s affordable, it’s healthy and can last for up to 3 days, depending on how hungry everyone is. The best part is, it’s refreshing and filling with just 7 ingredients. Only 6 ingredients if you don’t like avocado, but you’re crazy if you don’t!
With a little over $15 and 15 minutes, you feed your family this awesome dish. Make it for your next summer party, it’s sure to be a hit!
Lisa’s Beautiful Bean Salad Recipe
I’m not sure who Lisa is, but she is a genius! Here you go, and you’re welcome!
Ingredients
1 can Black Beans
1 can Pinto Beans
1 can Kidney Beans
1 jar Corn Chili Salsa
1 tub Tomatillo Fresh Salsa
½ bunch cilantro (chopped)
1 avocado (optional)
Instructions
Drain and rinse the beans. Pour into a bowl with salsas. Stir well and add cilantro and avocado. Chill well and serve with tortilla chips!
Note: I actually found the dip or salad to be saucier when I did not drain the beans, which I preferred. If you like less sauce then drain away.
