I have made history in my family!
Ever since I met Daddy, he has hated mac n’ cheese. Mommy, no question about it, I LOVE mackin’ on cheese any style! I always order the mac n’ cheese if it’s on the menu. One of my favorites is from — OMG! I cannot remember the name! I’ll get back to you. I know it’s in Hillcrest or North Park somewhere. A small place that serves lobster mac n’ cheese and sweet potato fries with a side of maple syrup! That’s what I’m talkin ‘ about!
Okay, side tracked! I’ve been working on spicing up Pinky’s meals. Pinky LOVES peas, all vegetables really…thank GOD! Low and behold, one day our pantry was running low and all that seemed appealing was Kraft Macaroni & Cheese, SPAM, left over hot dogs and peas. By the way, I hated peas…I tolerate them now since I’m outnumbered. Long story short I came up with a tasty new dish that Daddy and Pinky love…
Mac n’ Cheese with SPAM and Peas
Ingredients
2 boxes of Kraft Macaroni & Cheese
1/2 cup Milk
1 stick Butter
1-2 cups of Frozen Peas (depending on how much you love peas)
1 can SPAM chopped into squares
Cook macaroni as normal following the instructions on the box. When cooked mix in milk and butter as directed.
Cook SPAM in frying pan for about 15 minutes stirring often.
Cook peas in a bowl of water and microwave for 2 minutes.
Mix together for a fun, festive hearty meal! The kids will love it. A fun way to get them to eat some veges!

Lei Lounge has this amazing lobster mac n’ cheese I speak of! You must try! Oddly enough, they are closed for the winter. Not sure when they will open up. Until then, enjoy this mac n’ cheese discovery our family made.
